The process of hydrolyzing starch to glucose is generally called starch saccharification. Before starch can be mashed, it must be liquefied. The liquefaction reaction in the production of starch sugar is a biochemical reaction in which starch is converted into relatively small molecular weight dextrins and oligosaccharides by the catalysis of bacterial α-amylase. Starch hydrolyzes starch into dextrin and oligosaccharide, the molecule becomes smaller and the number becomes larger, which is beneficial to the saccharification of glucoamylase.
